Italian Stuffed Cabbage Rolls

1 large head of green cabbage

1 cup cooked Italian sausage, crumbled

1 cup cooked rice (preferably arborio for a creamier texture)

1/2 cup grated Parmesan cheese

1 cup marinara sauce (plus more for topping)

1/4 cup fresh parsley, chopped

1 teaspoon dried oregano

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Olive oil for drizzling

Fresh basil leaves for garnish

Prepare the Cabbage: Bring a large pot of salted water to a boil. Carefully remove the core from the head of cabbage. Gently peel off 12-15 leaves and blanch them in boiling water for 2-3 minutes until softened. Drain and cool on a towel.

    Make the Filling: In a large mixing bowl, combine cooked sausage, cooked rice, Parmesan cheese, 1 cup of marinara sauce, parsley, oregano, garlic powder, red pepper flakes (if using), salt, and pepper. Mix thoroughly until all ingredients are well incorporated.

      Assemble the Rolls: Lay a cabbage leaf flat on a clean surface. Place approximately 2-3 tablespoons of the filling at the bottom of the leaf. Fold the sides over the filling and roll up from the base to the tip, ensuring the filling is secure inside. Repeat with remaining leaves and filling.

        Prepare for Baking: Preheat your oven to 375°F (190°C). Spread a thin layer of marinara sauce on the bottom of a large baking dish. Arrange the cabbage rolls seam-side down in the dish. Drizzle with olive oil and pour additional marinara sauce on top.

          Bake: Cover the baking dish with aluminum foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes, until bubbly and slightly browned on top.

            Serve: Garnish with fresh basil leaves and additional grated Parmesan if desired. Serve hot and enjoy!
