2 cups apple cider

1/2 cup unsalted butter, melted

1 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 tsp vanilla extract

2 1/2 cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/2 tsp salt

1/4 cup granulated sugar (for coating)

1 tbsp ground cinnamon (for coating)

Instructions
 

Reduce the Cider: In a saucepan, bring the apple cider to a boil over medium-high heat. Reduce heat and let it simmer until the liquid is reduced to about 1 cup (approximately 15-20 minutes). Allow it to cool slightly.

    Prepare the Batter: Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Mix until well combined. Add the eggs and vanilla extract, followed by the reduced apple cider. Stir until smooth.

      Mix the Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually fold the dry mixture into the wet mixture until just combined. Be careful not to overmix.

        Fill the Donut Pans: Grease a donut pan with non-stick cooking spray. Using a piping bag or a ziplock bag with the corner snipped off, fill each donut cavity about 3/4 full with the batter.

          Bake: Place the pans in the preheated oven and bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and let them cool in the pan for 5 minutes.
