Ingredients

1 pound baby carrots (or regular carrots cut into sticks)

3 tablespoons unsalted butter

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley, chopped for garnish (optional)

Instructions

Preparation: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Melt Butter: In a small saucepan over low heat, combine the unsalted butter, honey, and minced garlic. Stir until the butter is melted and the mixture is fragrant. Remove from heat.

Toss Carrots: In a large mixing bowl, add the baby carrots. Pour the honey garlic butter mixture over the carrots. Add fresh thyme, salt, and pepper. Toss well to ensure the carrots are evenly coated.

Roast Carrots: Spread the carrots out in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and slightly caramelized, stirring halfway through to ensure even cooking.

Serve: Once cooked, remove from the oven and transfer the carrots to a serving dish. If desired, garnish with chopped fresh parsley for a pop of color and flavor. Serve warm and enjoy!
