Homemade Soft Pretzels

4 cups all-purpose flour

1 packet (2 ¼ teaspoons) active dry yeast

1 ½ cups warm water (about 110°F)

1 tablespoon granulated sugar

1 teaspoon salt

½ cup baking soda

1 large egg (for egg wash)

Coarse sea salt (for sprinkling)

Optional: melted butter (for brushing)

Instructions
 

Activate the Yeast: In a small bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until foamy.

    Mix the Dough: In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture. Stir it together until a dough begins to form.

      Knead the Dough: Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

        First Rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

          Shape the Pretzels: Preheat the oven to 450°F (232°C). Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches) and twist into a pretzel shape.

            Baking Soda Bath: In a large pot, bring 4 cups of water to a boil and add the baking soda. Carefully place each pretzel in the boiling soda bath for about 30 seconds, then remove with a slotted spoon and place them on a baking sheet lined with parchment paper.

              Egg Wash & Salt: Beat the egg in a small bowl. Brush the pretzels with the egg wash and sprinkle with coarse sea salt.

                Bake: Bake in the preheated oven for 12-15 minutes or until golden brown. If desired, brush with melted butter right after coming out of the oven.

                  Cool & Serve: Allow the pretzels to cool slightly on a wire rack before serving. Enjoy with your favorite mustard or cheese dip!
