Ingredients

1 lb (450g) boneless, skinless chicken breasts

1 cup crushed BBQ-flavored potato chips

1/2 cup all-purpose flour

2 large eggs

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper, to taste

1/2 cup honey BBQ sauce (for dipping)

Cooking spray or oil for frying

Instructions

Prep the Chicken: Cut the chicken breasts into bite-sized nuggets and set aside.

Prepare Breading Station: In one bowl, place the flour mixed with garlic powder, onion powder, smoked paprika, salt, and pepper. In another bowl, beat the eggs. In a third bowl, add the crushed BBQ chips.

Coat the Nuggets: Dredge each chicken nugget in the flour mixture, shaking off the excess. Next, dip it into the beaten eggs, and finally coat with the crushed BBQ chips, pressing gently to adhere.

Heat the Oil: Heat a large skillet over medium-high heat and add a little cooking spray or oil.

Cook the Nuggets: Once the oil is hot, add the chicken nuggets in batches, ensuring they are not overcrowded. Fry for 4-5 minutes on each side or until golden brown and cooked through. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.

Serve: Serve warm with honey BBQ sauce for dipping.
