For the Honey BBQ Chicken:

4 boneless, skinless chicken breasts (about 1.5 lbs)

1/2 cup honey

1/4 cup low-sodium soy sauce

1/4 cup apple cider vinegar

2 tablespoons Dijon mustard

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon black pepper

1/2 teaspoon salt

For the Creamy Garlic Parmesan Potatoes:

2 lbs baby Yukon gold potatoes, halved

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

3 cloves garlic, minced

2 tablespoons unsalted butter

1 teaspoon dried thyme

Salt and black pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Prep the Chicken Marinade:

    In a bowl, mix honey, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, smoked paprika, black pepper, and salt until well combined.

      Marinate the Chicken:

        Place the chicken breasts in a zip-top bag or a shallow dish, pour the honey BBQ marinade over the chicken, and let it marinate in the refrigerator for at least 30 minutes (or up to 4 hours for maximum flavor).

          Cook the Potatoes:

            While the chicken is marinating, prepare the potatoes. In a large pot, add halved potatoes and cover them with water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain and set aside.

              Make the Creamy Garlic Sauce:

                In a large skillet over medium heat, melt butter. Add minced garlic and sauté for about 1-2 minutes until fragrant. Stir in the heavy cream and bring to a gentle simmer. Add Parmesan cheese, thyme, salt, and black pepper to taste. Stir until the cheese is melted and the sauce is creamy.

                  Combine Potatoes and Sauce:

                    Add the cooked potatoes to the skillet with the creamy garlic sauce. Gently toss to coat the potatoes evenly. Cook for another 2-3 minutes to warm through. Remove from heat.

                      Cook the Chicken:

                        Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard the leftover marinade. Grill the chicken for about 6-7 minutes on each side or until fully cooked and juices run clear, reaching an internal temperature of 165°F (75°C).

                          Serve:

                            Slice the grilled honey BBQ chicken and serve alongside the creamy garlic Parmesan potatoes. Garnish with fresh parsley, if desired.
