2 large sweet potatoes

1 pound ground turkey

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and pepper to taste

1/2 cup shredded cheese (cheddar or Mexican blend)

1 avocado, diced (for topping)

Fresh cilantro, chopped (for garnish)

Prepare Sweet Potatoes: Preheat the oven to 400°F (200°C). Pierce the sweet potatoes with a fork a few times. Place them on a baking sheet and bake for 45-60 minutes, or until they are tender when pierced with a fork.

    Cook Ground Turkey: In a large skillet over medium heat, add a drizzle of olive oil. Sauté the diced onion for about 3-4 minutes until translucent. Add minced garlic and cook for another minute until fragrant.
