Hearty Veggie Rolls with Peanut Sauce

For the veggie rolls:

8 rice paper wrappers

1 cup carrots, julienned

1 cup cucumber, julienned

1 cup bell peppers, thinly sliced (choose a mix of colors)

1 cup red cabbage, shredded

1 avocado, sliced

1 cup fresh herbs (like mint, basil, and cilantro)

1/2 cup cooked vermicelli noodles (optional)

For the peanut sauce:

1/2 cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon maple syrup or honey

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 garlic clove, minced

1-2 tablespoons water (to thin the sauce, as needed)

Crushed peanuts and chili flakes for garnish (optional)

Instructions
 

Prep the Veggies: Wash and prepare all the vegetables as described. Ensure they are cut into thin strips for easy rolling.

    Make the Peanut Sauce: In a mixing bowl, combine peanut butter, soy sauce, maple syrup (or honey), rice vinegar, sesame oil, and minced garlic. Whisk until smooth. Gradually add water, one tablespoon at a time, until you reach the desired consistency. Taste and adjust seasonings as necessary.

      Soften the Rice Paper: Fill a shallow dish or a large pan with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds, or until it becomes soft and pliable. Place it on a clean cutting board or flat surface.

        Fill the Wrap: In the center of the softened rice paper, layer a small handful of carrots, cucumbers, bell peppers, red cabbage, avocado slices, and herbs. If using, add a small amount of cooked vermicelli noodles.

          Roll it Up: Start by folding the sides of the rice paper over the filling, then tuck the bottom over the filling and gently roll toward the top, making a tight roll. Repeat the process with the remaining rice papers and fillings.

            Serve: Slice the veggie rolls in half for presentation (optional) and serve with the peanut sauce drizzled on top or on the side for dipping. Garnish with crushed peanuts and chili flakes if desired.
