2 medium zucchinis, spiralized or sliced into thin strips

2 cups cherry tomatoes, halved

2 cloves garlic, minced

1 tablespoon olive oil

1/2 teaspoon red pepper flakes (optional for heat)

1 teaspoon dried basil

Salt and pepper, to taste

1/4 cup fresh basil leaves, chopped (for garnish)

1/4 cup grated Parmesan cheese (optional, for serving)

1 cup cooked whole wheat pasta (or any pasta of your choice)

Instructions
 

Prepare the Zucchini: If you haven't yet, spiralize or slice the zucchinis into thin strips and set aside.

    Sauté the Tomatoes: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.

      Add Cherry Tomatoes: Incorporate the halved cherry tomatoes into the skillet, and stir in the red pepper flakes (if using), dried basil, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes begin to soften and release their juices.

        Combine Zucchini with Tomatoes: Add the prepared zucchini to the skillet and toss everything together. Continue to cook for another 3-5 minutes, just until the zucchini is slightly tender but still retains some crunch.

          Mix with Pasta: Add the cooked whole wheat pasta to the skillet and toss to combine, ensuring everything is well-coated in the tomato sauce. Allow the pasta to heat through for 2 minutes.
