Healthy Homemade Granola

2 cups rolled oats

1 cup mixed nuts (almonds, walnuts, pecans), roughly chopped

1/2 cup pumpkin seeds

1/2 cup sunflower seeds

1/3 cup honey or maple syrup

1/4 cup coconut oil, melted

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp sea salt

1 cup dried fruit (raisins, cranberries, or apricots), chopped

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, chopped nuts, pumpkin seeds, sunflower seeds, cinnamon, and sea salt. Stir well to mix all the dry ingredients uniformly.

      Combine Wet Ingredients: In a separate smaller bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract until combined.

        Combine Both Mixtures: Pour the wet mixture over the dry ingredients. Stir until all the dry ingredients are well coated.

          Spread on Baking Sheet: Transfer the granola mixture to the prepared baking sheet. Spread it out evenly, pressing it down with the back of a spatula for a denser texture.

            Bake: Bake in the preheated oven for about 25-30 minutes, stirring halfway through to ensure even baking, until the granola is golden brown.

              Cool and Add Dried Fruit: Once done, remove from the oven and let it cool completely on the baking sheet. Once cooled, mix in the dried fruit.

                Store: Store the granola in an airtight container at room temperature for up to two weeks.
