2 lbs chicken thighs (bone-in, skin-on for extra flavor)

1 cup soy sauce (preferably low sodium)

1/2 cup brown sugar (packed)

1/4 cup rice vinegar

1/4 cup water

4 cloves garlic (minced)

1 inch ginger (fresh, grated)

1 tbsp sesame oil

1/2 tsp black pepper

3 green onions (chopped, for garnish)

1 sesame seeds (for garnish)

Cooked white rice (for serving)

Instructions
 

Prepare the Marinade: In a large mixing bowl, whisk together soy sauce, brown sugar, rice vinegar, water, minced garlic, grated ginger, sesame oil, and black pepper until the sugar is dissolved.

    Marinate Chicken: Add the chicken thighs to the marinade, ensuring each piece is well-coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or overnight for best flavor.

      Preheat Oven: Preheat your oven to 375°F (190°C).

        Bake the Chicken: Place the chicken thighs in a baking dish with the skin side up. Pour the marinade over the chicken, reserving half for later use. Bake in the preheated oven for 35-40 minutes or until the chicken is cooked through and the skin is crispy and caramelized.

          Glaze the Chicken: In the last 10 minutes of baking, baste the chicken with the reserved marinade to enhance the flavor.
