Ingredients

1 lb ground turkey

2 tablespoons olive oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 medium onion, thinly sliced

2 cloves garlic, minced

1-inch piece of ginger, grated

2 cups broccoli florets

1 cup snap peas

1/4 cup soy sauce (low sodium)

2 tablespoons teriyaki sauce

1 tablespoon sesame oil

1 teaspoon cornstarch (mixed with 1 tablespoon water)

1 tablespoon sesame seeds (for garnish)

3 green onions, sliced (for garnish)

Cooked rice or noodles, for serving

Instructions

Heat the olive oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook until browned, breaking it apart with a spatula (about 5-7 minutes).

Add the sliced onion, bell peppers, garlic, and ginger to the skillet. Stir-fry for about 3-4 minutes until the vegetables start to soften.

Add the broccoli florets and snap peas to the mixture, cooking for an additional 2-3 minutes until they are bright and tender-crisp.

In a small bowl, combine soy sauce, teriyaki sauce, and sesame oil. Pour this sauce over the turkey and vegetables, stirring to combine.

Stir in the cornstarch mixture, cooking for another 1-2 minutes until the sauce thickens.

Remove from heat and garnish with sesame seeds and chopped green onions.

Serve the stir fry hot over cooked rice or noodles.
