Ground Turkey Sweet Potato Skillet

1 pound ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper, to taste

2 tablespoons olive oil

1 cup spinach or kale, roughly chopped

1/2 cup chicken broth

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook for about 8-10 minutes, stirring occasionally, until they start to soften and slightly caramelize. Remove from the skillet and set aside.

    Sauté the Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and cook for 3-4 minutes until translucent. Stir in the minced garlic and diced bell pepper, cooking for an additional 2-3 minutes.

      Brown the Turkey: Push the vegetables to the side of the skillet and add the ground turkey. Break it apart with a spatula and cook until browned and cooked through, about 5-7 minutes.

        Season the Mixture: Stir in the smoked paprika, ground cumin, chili powder, salt, and pepper. Mix well to combine the spices evenly with the turkey and veggies.

          Combine and Simmer: Return the sweet potatoes to the skillet. Pour in the chicken broth and stir everything together. Allow it to simmer for about 5 minutes to meld the flavors and soften the sweet potatoes further. If using spinach or kale, fold it in during the last 2 minutes of cooking.

            Serve: Taste and adjust seasoning if necessary. Garnish with fresh cilantro or parsley before serving for an extra pop of flavor.
