1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 onion, chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 cup corn kernels (fresh, frozen, or canned)

1 can black beans, drained and rinsed

1 tsp cumin

1 tsp smoked paprika

½ tsp chili powder (optional)

Salt and pepper to taste

1 cup shredded cheddar cheese (or a dairy-free alternative)

1/4 cup chicken or vegetable broth

1 tablespoon olive oil

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prep the Sweet Potatoes: Preheat your oven to 375°F (190°C). Boil sweet potatoes in a large pot of salted water for about 10-12 minutes until tender. Drain and set aside.

    Cook the Turkey: In a large skillet, heat olive oil over medium heat. Add chopped onion and bell pepper, cooking until softened (about 4-5 minutes). Stir in minced garlic and cook for another minute.

      Brown the Ground Turkey: Add ground turkey to the skillet. Break it apart with a spoon and cook until fully browned (about 5-7 minutes). Season with cumin, smoked paprika, chili powder (if using), salt, and pepper.

        Combine Ingredients: Once the turkey is cooked, stir in corn and black beans. Let it simmer for about 3-5 minutes. If the mixture appears dry, add the chicken or vegetable broth to moisten it.

          Assemble the Casserole: In a greased 9x13 inch baking dish, layer the turkey mixture evenly at the bottom. Next, layer the boiled sweet potatoes over the turkey mix. Sprinkle the top with shredded cheddar cheese.

            Bake the Casserole: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven and garnish with fresh cilantro or parsley if desired. Let it cool for a few minutes before serving.
