1 pound ground turkey

2 medium bell peppers (red and yellow), diced

1 small yellow onion, finely chopped

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

1 can (14 oz) diced tomatoes, undrained

1 cup corn (fresh or frozen)

2 tablespoons olive oil

Salt and pepper, to taste

Fresh cilantro or parsley, for garnish

Cooked quinoa or rice, for serving

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes until translucent.

    Add the minced garlic to the skillet and cook for an additional minute until fragrant.

      Increase the heat to medium-high and add the ground turkey. Cook until it is browned and no longer pink, breaking it apart with a spatula (about 5-7 minutes).

        Stir in the diced bell peppers and cook for another 5 minutes until they start to soften.

          Sprinkle in the ground cumin, smoked paprika, chili powder, salt, and pepper. Mix well to combine the spices with the meat and vegetables.

            Pour in the can of diced tomatoes (with the juice) and the corn. Stir everything together and bring to a simmer. Cook for about 10 minutes, allowing the flavors to meld and the mixture to thicken slightly.

              Taste and adjust seasoning if needed. Remove from heat.

                Serve the turkey and pepper mixture over cooked quinoa or rice, and garnish with chopped cilantro or parsley for a fresh touch.
