2 large chicken breasts, boneless and skinless

1 cup pineapple chunks (fresh or canned in its own juice)

1/4 cup coconut aminos (Paleo-friendly soy sauce alternative)

2 tablespoons olive oil

1 tablespoon apple cider vinegar

2 cloves garlic, minced

1 teaspoon ground ginger

Salt and pepper, to taste

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Marinate the Chicken: In a bowl, combine the coconut aminos, olive oil, apple cider vinegar, minced garlic, ground ginger, salt, and pepper. Add the chicken breasts and ensure they are well coated. Cover and marinate in the refrigerator for at least 30 minutes or up to 2 hours for deeper flavor.

    Prep the Grill: Preheat your grill to medium-high heat. If you are using wooden skewers, soak them in water for about 30 minutes to prevent burning.

      Prepare the Pineapple: If the pineapple isn't pre-cut, cut fresh pineapple into chunks, ensuring they are about the same size as the chicken pieces for even cooking.

        Skewer the Chicken and Pineapple: Thread the marinated chicken and pineapple chunks onto skewers, alternating between the two. Make sure to leave a little space between each piece for even cooking.
