Ingredients
  

1 cup cooked chickpeas (or 1 can, drained and rinsed)

½ ripe avocado

¼ cup cashews (soaked in water for at least 2 hours)

1 tablespoon lemon juice

1 garlic clove, minced

2 tablespoons fresh parsley, chopped

1 tablespoon fresh chives, chopped

1 tablespoon fresh dill, chopped

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

4 slices whole grain or sourdough bread

1 cup mixed greens (e.g., spinach, arugula)

½ cucumber, thinly sliced

1 small tomato, sliced

Optional: red onion slices and sprouts for garnish

Instructions
 

Prepare the Green Goddess Dressing: In a food processor, combine the soaked cashews, avocado, lemon juice, minced garlic, parsley, chives, dill, salt, and pepper. Blend until smooth and creamy, adding a little water if needed to achieve desired consistency. Taste and adjust seasoning as necessary.

    Mash the Chickpeas: In a medium bowl, roughly mash the chickpeas with a fork or potato masher, leaving some chunks for texture.

      Mix the Salad: Add the green goddess dressing to the mashed chickpeas and mix until well combined. This will be your filling for the sandwich.
