Greek Turkey Meatballs with Tzatziki Sauce

For the Meatballs:

1 pound ground turkey

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 small onion, finely chopped

1/4 cup fresh parsley, chopped

1 tablespoon fresh mint, chopped

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 egg, beaten

Zest of 1 lemon

Olive oil for cooking

For the Tzatziki Sauce:

1 cup plain Greek yogurt

1/2 cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon lemon juice

Salt and pepper to taste

Preheat Oven:

    Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

      Prepare the Meatball Mixture:

        In a large bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, minced garlic, chopped onion, parsley, mint, oregano, salt, pepper, beaten egg, and lemon zest. Mix gently until just combined. Avoid over-mixing to keep the meatballs tender.

          Shape the Meatballs:

            Using your hands, form the mixture into 1 to 1.5-inch meatballs. Place them on the prepared baking sheet.

              Cook the Meatballs:

                Drizzle olive oil over the meatballs, then bake in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown on top (internal temperature should reach 165°F or 75°C).

                  Prepare the Tzatziki Sauce:

                    While the meatballs are baking, prepare the tzatziki sauce. In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, and pepper. Mix well until thoroughly combined. Adjust seasoning to taste and refrigerate until ready to serve.

                      Serve:

                        Once the meatballs are done, remove them from the oven and let them rest for a few minutes. Serve warm with a generous dollop of tzatziki sauce on the side.
