For the Chicken Marinade:

500g boneless chicken thighs, cut into bite-sized pieces

1 cup plain yogurt

2 tablespoons lemon juice

2 teaspoons garam masala

2 teaspoons ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric

1 teaspoon chili powder

Salt, to taste

3 cloves garlic, minced

1 inch ginger, grated

For the Tikka Masala Sauce:

2 tablespoons vegetable oil

1 large onion, finely chopped

3 cloves garlic, minced

1 inch ginger, grated

2 green chilies, finely chopped (adjust spice level to taste)

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon garam masala

400g can of diced tomatoes

1 cup heavy cream

Salt, to taste

Fresh cilantro, for garnish

Instructions
 

Marinate the Chicken:

    In a large bowl, combine the yogurt, lemon juice, garam masala, ground cumin, ground coriander, turmeric, chili powder, salt, garlic, and ginger. Mix well and add the chicken pieces. Coat the chicken thoroughly, cover with plastic wrap, and refrigerate for at least 2 hours, ideally overnight.

      Cook the Chicken:

        Preheat your grill or oven to high heat. Thread the marinated chicken onto skewers, then grill for 10-15 minutes until the chicken is cooked through and slightly charred. Set aside.

          Prepare the Sauce:

            In a large pan, heat the vegetable oil over medium heat. Add the chopped onions and sauté until golden brown. Incorporate the minced garlic, grated ginger, and green chilies, cooking for an additional minute until fragrant.

              Spice it Up:

                Stir in the ground cumin, coriander, and garam masala. Cook for about a minute until the spices release their aroma.

                  Add Tomatoes and Cream:

                    Pour in the diced tomatoes, season with salt, and let it simmer for about 10 minutes until thickened. Then, reduce the heat and stir in the heavy cream, mixing until smooth.

                      Combine Chicken and Sauce:

                        Finally, add the grilled chicken to the sauce, ensuring each piece is adequately coated. Let it simmer for another 5 minutes to meld the flavors together.

                          Serve:
