6 large eggs

1/4 cup milk

1 cup spinach, chopped

1 cup cherry tomatoes, halved

1/2 cup bell pepper, diced (any color)

1/4 cup onion, finely chopped

1 cup feta cheese, crumbled

1 tablespoon olive oil

Salt and pepper to taste

Fresh herbs (parsley or basil) for garnish

Preheat Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In an oven-safe skillet, heat the olive oil over medium heat. Add the onion and bell pepper, and sauté for about 3-4 minutes until softened. Add the spinach and cherry tomatoes, and cook for another 2 minutes until the spinach is wilted.

      Prepare Egg Mixture: In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.

        Combine: Pour the egg mixture over the sautéed vegetables in the skillet. Stir gently to combine, and then evenly distribute the crumbled feta cheese on top.

          Cook: Let the frittata cook on the stovetop for about 3-4 minutes, undisturbed, until the edges begin to set.

            Bake: Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the frittata is puffed and firm in the center.
