12 oz spaghetti or fettuccine

4 tablespoons unsalted butter

5 cloves garlic, finely minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup heavy cream

1 cup grated Parmesan cheese, plus extra for serving

Salt and freshly ground black pepper, to taste

1 cup fresh spinach (optional)

2 tablespoons chopped fresh parsley (for garnish)

Zest of 1 lemon (for brightness)

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti or fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.

    Make the Garlic Butter Sauce: In the same pot over medium heat, melt the butter. Add the minced garlic and red pepper flakes, sautéing until fragrant (about 1-2 minutes). Be careful not to burn the garlic.

      Create the Creamy Base: Pour the heavy cream into the pot, stirring to combine. Let it simmer for about 2-3 minutes until slightly thickened.

        Add Cheese: Lower the heat and gradually whisk in the grated Parmesan cheese, ensuring it melts smoothly into the sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
