Ingredients

1 lb sirloin steak, cut into bite-sized cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped for garnish

Instructions

Prepare the Potatoes:

    - Preheat the oven to 425°F (220°C).

      - In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, salt, and pepper until well-coated.

        - Spread them out in a single layer on a baking sheet. Roast in the oven for 20-25 minutes or until golden brown and fork-tender, flipping halfway through.

          Cook the Steak Bites:

            - While the potatoes are roasting, season the steak cubes with salt and pepper.

              - In a large skillet, heat 2 tablespoons of butter over medium-high heat. Once melted and bubbling, add the seasoned steak bites in a single layer (you may need to do this in batches).

                - Sear the steak bites for 2-3 minutes without stirring, then flip them over and cook for an additional 1-2 minutes for medium-rare (or until desired doneness).

                  Make the Garlic Butter Sauce:

                    - Once the steak bites are cooked to your preference, reduce the heat to medium-low and add the remaining 2 tablespoons of butter, minced garlic, rosemary, and thyme to the skillet.

                      - Stir everything together and let the garlic sauté for about 1 minute until fragrant, being careful not to burn it.

                        Combine and Serve:

                          - Once the potatoes are roasted and crispy, remove them from the oven and combine them with the garlic butter steak bites in the skillet.

                            - Toss gently to combine, ensuring the potatoes are coated in the buttery garlic sauce.

                              - Garnish with fresh parsley before serving.

Enjoy the rich flavors of this dish as a delightful dinner option or an appetizer at your next gathering!
