Ingredients
  

1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons fresh parsley, chopped (plus more for garnish)

1 teaspoon smoked paprika

Salt and pepper, to taste

2 teaspoons olive oil

½ teaspoon red pepper flakes (optional)

Lemon wedges, for serving

Prepare the potatoes: In a large skillet, heat 2 teaspoons of olive oil over medium heat. Add the halved baby potatoes, season with salt and pepper, and cook for about 10-12 minutes, stirring occasionally, until they are golden brown and fork-tender. Remove the potatoes from the skillet and set aside.

    Cook the steak: In the same skillet, increase the heat to medium-high. Add the cubed sirloin steak to the skillet, season with smoked paprika, salt, and pepper. Sear the steak for about 3-4 minutes, or until it’s browned on all sides. Avoid overcrowding the pan; cook in batches if necessary.

      Add garlic and butter: Once the steak is cooked to your desired doneness, reduce the heat to medium, and add the minced garlic and butter to the skillet. Stir well to coat the steak in the garlic butter. Cook for an additional 1-2 minutes until the garlic is fragrant.

        Combine and serve: Add the cooked baby potatoes back into the skillet with the steak. Toss everything together, allowing the potatoes to soak up some of the garlic butter sauce. Stir in the fresh parsley and red pepper flakes if using. Heat through for 1-2 minutes.
