Ingredients
  

4 slices of thick-cut sourdough bread

4 tablespoons unsalted butter, softened

2 teaspoons minced garlic

1 teaspoon dried parsley (or 1 tablespoon fresh parsley, chopped)

1 cup shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

Salt and pepper to taste

Optional: 1/4 teaspoon red pepper flakes for a spicy kick

Prepare Garlic Butter: In a small mixing bowl, combine the softened butter, minced garlic, dried parsley, a pinch of salt, and red pepper flakes (if using). Mix well until all ingredients are thoroughly blended.

    Assemble the Sandwich: Take two slices of sourdough bread and spread a generous amount of the garlic butter mixture on one side of each slice. On the unbuttered side, layer half of the mozzarella and cheddar cheese evenly.

      Build the Sandwich: Place the second slice of bread on top, with the garlic buttered side facing outwards. Repeat the process with the remaining bread and cheese to create a second sandwich.

        Grill the Sandwiches: Heat a non-stick skillet or griddle over medium heat. Once hot, place the sandwiches in the skillet. Cook for about 3-4 minutes on each side, or until the bread is golden brown and crispy, and the cheese is melted. Press down gently with a spatula for even grilling.

          Serve: Once cooked to perfection, remove the sandwiches from the skillet and let them cool for a minute. Slice in half diagonally and serve warm, optionally with a side of marinara sauce for dipping.
