Fruit Tacos

Ingredients
  

8 small flour or corn tortillas

1 cup diced fresh pineapple

1 cup diced mango

1 cup diced strawberries

1 cup diced kiwi

1 cup Greek yogurt (vanilla or plain)

2 tablespoons honey

1 teaspoon lime juice

1 teaspoon cinnamon

Fresh mint leaves for garnish

Optional: 1/4 cup shredded coconut or chopped nuts for topping

Prepare the Fruits: In a large mixing bowl, combine the diced pineapple, mango, strawberries, and kiwi. Toss gently to mix the fruits evenly.

    Make the Yogurt Sauce: In a separate bowl, mix the Greek yogurt with honey, lime juice, and cinnamon. Whisk until smooth and well-combined.

      Warm the Tortillas: Heat a non-stick skillet over medium heat. Place each tortilla in the skillet for about 30 seconds on each side until warm and slightly toasted. Remove and set aside.

        Assemble the Tacos: Lay a warm tortilla flat and spoon a generous portion of the fruit mixture onto the center. Drizzle some of the yogurt sauce over the top.

          Garnish and Serve: Sprinkle shredded coconut or nuts if using, and add fresh mint leaves on top. Fold the tortilla like a taco and serve immediately. Repeat with the remaining tortillas and filling.

            Enjoy: These fruit tacos are best enjoyed fresh but can be stored for later if you keep the components separate until serving!
