Ingredients
  

1 can (15 oz) sweet corn, drained

1 can (15 oz) black beans, rinsed and drained

1 red bell pepper, diced

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

1 cup shredded sharp cheddar cheese

1 cup mayonnaise

1 tablespoon lime juice

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper, to taste

2 cups Fritos corn chips

Fresh cilantro, for garnish (optional)

Instructions
 

In a large mixing bowl, combine the drained sweet corn, black beans, diced red bell pepper, chopped red onion, halved cherry tomatoes, and shredded cheddar cheese. Stir gently to combine all the ingredients.

    In a separate small bowl, whisk together the mayonnaise, lime juice, chili powder, cumin, salt, and pepper until smooth and evenly mixed.

      Pour the dressing over the corn and bean mixture, and toss until everything is thoroughly coated with the creamy dressing.

        Let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.

          Just before serving, gently fold in the Fritos corn chips for added crunch.

            Garnish with fresh cilantro, if desired, and serve immediately for the best texture.
