Ingredients

4 ripe bananas

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup milk (or non-dairy alternative)

1/4 cup granulated sugar

1/2 cup unsalted butter

1 tablespoon brown sugar

1 teaspoon vanilla extract

Optional: powdered sugar for dusting and chopped nuts for garnish

Instructions

Prepare the Bananas: Peel the bananas and slice them diagonally into about 1 to 1.5-inch thick pieces. Set aside.

Make the Batter: In a bowl, combine the flour, baking powder, salt, and ground cinnamon. Gradually whisk in the milk until the batter is smooth and free of lumps. It should be thick enough to coat the bananas but not too heavy.

Heat the Oil: In a large skillet or frying pan, heat enough oil to cover the bottom about 1/4 inch deep over medium heat.

Fry the Bananas: Dip each banana slice into the batter, allowing the excess to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes on each side, or until golden and crisp. Remove and place on paper towels to drain excess oil.

Make the Cinnamon Butter Sauce: In a separate saucepan, melt the butter over medium heat. Add the brown sugar and stir until dissolved. Add the vanilla extract and remaining cinnamon, mixing well. Allow the sauce to simmer for 2-3 minutes, stirring frequently until slightly thickened.

Serve: Arrange the fried bananas on a serving platter. Drizzle generously with the warm cinnamon butter sauce and dust with powdered sugar. Optional: sprinkle with chopped nuts for extra crunch.

Enjoy: Serve immediately while warm for the best experience.
