Ingredients

2 boneless, skinless chicken thighs

1 tablespoon sesame oil

4 cups chicken broth

2 packs instant ramen noodles (discard the seasoning packets)

1 cup sliced shiitake mushrooms

1 red bell pepper, julienned

1 cup baby spinach

2 tablespoons soy sauce

2 tablespoons Sriracha (adjust to taste)

1 tablespoon chili paste (or more for extra heat)

4 cloves garlic, minced

1 cup heavy cream

1 tablespoon lime juice

1 green onion, sliced (for garnish)

Fresh cilantro leaves (for garnish)

Salt and pepper to taste

Instructions

Prepare the Chicken:

    - Season the chicken thighs with salt and pepper. In a skillet, heat sesame oil over medium-high heat. Add the chicken thighs and cook for about 5-7 minutes on each side, or until well browned and cooked through. Remove from heat and let them rest for a few minutes before slicing into strips.

      Cook the Ramen:

        - In a large pot, bring the chicken broth to a boil. Add the instant ramen noodles and cook according to package instructions, usually about 3-4 minutes. Add the shiitake mushrooms and red bell pepper during the last minute of cooking to soften them slightly.

          Make the Sauce:

            - In a separate saucepan, combine the minced garlic and a splash of oil over medium heat. Sauté until fragrant (about 1-2 minutes). Add the heavy cream, soy sauce, Sriracha, chili paste, and lime juice. Stir until well combined, and let simmer for another 2-3 minutes. Adjust seasoning with salt and pepper to taste.

              Combine Everything:

                - Once the ramen is cooked, gently stir in the baby spinach until wilted. Portion the ramen into bowls. Top each with sliced chicken and ladle over the creamy garlic sauce.

                  Garnish and Serve:

                    - Finish with a sprinkle of sliced green onions and fresh cilantro leaves. Serve immediately and enjoy the fiery flavors of this delightful ramen dish!
