6 large eggs

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

2 tablespoons chopped fresh chives (or green onions)

1 celery stalk, finely chopped

8 slices of bread (white, whole grain, or your choice)

Lettuce leaves for garnish

Optional: sliced tomatoes or pickles for topping

Boil the eggs: Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil, then cover the saucepan and remove it from heat. Let the eggs sit for 12-15 minutes.

    Cool and peel: Transfer the eggs to an ice bath to cool for about 5 minutes. Once cooled, peel the eggs and chop them into small pieces.

      Mix the dressing: In a large mixing bowl, combine the mayonnaise, Dijon mustard, lemon juice, garlic powder, onion powder, salt, and pepper. Mix well until the dressing is smooth.

        Combine ingredients: Add the chopped eggs, chives, and finely chopped celery to the dressing. Gently fold them into the mixture until everything is well combined. Adjust seasoning if necessary.
