8 oz (225g) penne pasta

2 tablespoons olive oil

2 boneless, skinless chicken breasts, diced

Salt and pepper to taste

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

1/2 cup heavy cream

1 cup chicken broth

1/2 teaspoon dried Italian herbs

1/3 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to the package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once the oil is hot, add the diced chicken breast. Season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.

      Add Garlic and Tomatoes: Stir in the minced garlic and halved cherry tomatoes. Cook for about 2-3 minutes until the tomatoes soften and the garlic is fragrant.

        Incorporate Spinach: Add the fresh spinach leaves to the skillet and stir until they wilt, about 1 minute.

          Create the Sauce: Pour in the heavy cream and chicken broth. Mix everything together. Stir in the dried Italian herbs and let the mixture simmer for about 5 minutes until it slightly thickens.
