Easy One-Pot Garlic Butter Broccoli Pasta

Ingredients
  

8 oz. spaghetti or your favorite pasta

2 cups broccoli florets

4 tablespoons unsalted butter

4 cloves garlic, minced

4 cups vegetable broth (or chicken broth)

1 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

1/2 teaspoon lemon zest

1/4 cup grated Parmesan cheese

Fresh parsley, chopped, for garnish

Instructions
 

In a large pot, melt the butter over medium heat. Add the minced garlic and red pepper flakes (if using). Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

    Pour in the vegetable broth and bring it to a boil. Once boiling, add the spaghetti and stir to ensure it’s submerged in the broth.

      Allow the pasta to cook according to package instructions, about 7-10 minutes, stirring occasionally.

        When there's about 2-3 minutes left of cooking, add the broccoli florets into the pot. Stir well to combine.

          Once the pasta is al dente and the broccoli is tender, remove the pot from heat. Season with salt, black pepper, lemon zest, and sprinkle in the grated Parmesan cheese. Stir everything together until creamy and well incorporated.

            Serve hot, garnished with fresh chopped parsley and an extra sprinkle of Parmesan if desired.
