1 red bell pepper, diced

1 cup cooked breakfast sausage, crumbled (or bacon, if preferred)

4 large eggs

1 cup shredded cheddar cheese

Salt and pepper, to taste

Fresh parsley or chives, chopped (for garnish)

Hot sauce (optional, for serving)

Instructions
 

Prep the Potatoes: Start by boiling the diced potatoes in salted water for about 5 minutes until just tender. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing for about 3-4 minutes until they're softened and fragrant.

      Add Potatoes and Sausage: Stir the boiled potatoes and crumbled sausage into the skillet with the veggies. Season with salt and pepper. Let everything cook together for about 8-10 minutes, stirring occasionally, until the potatoes are golden brown and crispy.

        Cook the Eggs: Create small wells in the hash and crack an egg into each well. Cover the skillet with a lid and cook until the eggs reach your desired doneness (about 4-6 minutes for runny yolks).
