Easy Healthy Broccoli Pasta

8 oz whole wheat pasta (spaghetti or penne)

2 cups broccoli florets

3 cloves garlic, minced

1/4 cup olive oil

1/2 tsp red pepper flakes (optional)

1 lemon (zested and juiced)

1/4 cup grated Parmesan cheese (or nutritional yeast for vegan option)

Salt and pepper to taste

1/4 cup chopped fresh basil (for garnish)

1/4 cup pine nuts or walnuts, toasted (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Reserve 1/2 cup of the cooking water, then drain the pasta.

    Blanch the Broccoli: In the same pot, add the broccoli florets to the boiling water for about 2-3 minutes until vibrant green and tender-crisp. Remove and drain, then immediately rinse with cold water to stop the cooking process.

      Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using). Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

        Combine Pasta and Broccoli: Add the blanched broccoli and cooked pasta to the skillet. Toss well to combine, then add the lemon zest and juice. Stir, adding reserved pasta water a little at a time to create a light sauce that coats the pasta.

          Season and Serve: Remove from heat and stir in the grated Parmesan cheese (or nutritional yeast) and season with salt and pepper to taste. Serve immediately, garnished with fresh basil and toasted nuts if desired.
