For the Chicken Skewers:

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch pieces

1/4 cup soy sauce

2 tablespoons brown sugar

2 tablespoons lime juice

2 tablespoons fish sauce

1 tablespoon minced garlic

1 tablespoon minced ginger

1 teaspoon red pepper flakes (adjust to taste)

Bamboo or metal skewers

For the Peanut Sauce:

1/2 cup creamy peanut butter

2 tablespoons soy sauce

2 tablespoons lime juice

1 tablespoon honey or maple syrup (for sweetness)

1 garlic clove, minced

1 teaspoon grated ginger

Water, as needed for desired consistency

Chopped peanuts and cilantro for garnish (optional)

Instructions
 

Marinate the Chicken: In a large mixing bowl, whisk together the soy sauce, brown sugar, lime juice, fish sauce, minced garlic, minced ginger, and red pepper flakes. Add the chicken pieces and mix until well-coated. Cover and marinate for at least 30 minutes (up to 2 hours for more flavor) in the refrigerator.

    Prepare the Skewers: If using bamboo skewers, soak them in water for at least 30 minutes to prevent burning on the grill. If using metal skewers, no soaking is necessary.

      Make the Peanut Sauce: In a small bowl, combine the peanut butter, soy sauce, lime juice, honey (or maple syrup), minced garlic, and grated ginger. Whisk until smooth. Add water gradually until you reach your desired sauce consistency. Set aside.

        Skewering the Chicken: Preheat your grill to medium-high heat. Thread the marinated chicken pieces onto the skewers (about 4-5 pieces per skewer).
