Easy Crockpot Cheesy Beef and Noodles

1.5 lbs beef stew meat, cut into bite-sized pieces

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

4 cups beef broth

2 cups egg noodles

1 cup shredded cheddar cheese

1 cup cream of mushroom soup (or any cream soup of your choice)

1 teaspoon Worcestershire sauce

1 teaspoon dried Italian herbs (basil, oregano, thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Beef: In a skillet over medium-high heat, heat the olive oil. Add the diced beef stew meat and brown it on all sides for about 5-7 minutes. Remove the beef and set it aside.

    Sauté Aromatics: In the same skillet, add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute, until fragrant.

      Prepare the Crockpot: Layer the browned beef over the bottom of your crockpot. Add the sautéed onion and garlic mixture on top.

        Add Liquids and Seasonings: Pour the beef broth over the beef and add the Worcestershire sauce, dried herbs, salt, and pepper. Stir gently to combine all the ingredients.

          Cook on Low: Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the beef is tender.

            Add Noodles and Cheese: About 30 minutes before serving, stir in the egg noodles and cream of mushroom soup into the crockpot. Mix well, then sprinkle the shredded cheddar cheese on top. Cover and cook for an additional 30 minutes until the noodles are cooked and the cheese is melted.

              Serve: Once done, stir everything to combine. Garnish with chopped parsley before serving.
