Ingredients

1.5 lbs (around 680g) boneless, skinless chicken thighs

1 cup unsalted butter, melted

4 cloves garlic, minced

1 tablespoon Worcestershire sauce

2 teaspoons Dijon mustard

1 tablespoon fresh lemon juice

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1 tablespoon fresh parsley, chopped (for garnish)

Salt and pepper to taste

Fresh lemon wedges (for serving)

Instructions

Prep the Chicken: Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.

Make the Cowboy Butter Sauce: In a mixing bowl, combine melted butter, minced garlic, Worcestershire sauce, Dijon mustard, lemon juice, smoked paprika, and cayenne pepper. Stir well to combine all ingredients.

Cook the Chicken: In a large skillet or pan over medium-high heat, add a splash of olive oil. Once hot, add the chicken thighs and cook for about 5-7 minutes on each side, until they are golden brown and cooked through (internal temperature should reach 165°F/75°C).

Add the Sauce: Once the chicken is cooked, pour the cowboy butter sauce over the chicken thighs in the skillet. Allow it to simmer for an additional 2-3 minutes, ensuring that the chicken is well-coated in the sauce.

Serve: Remove from heat, transfer the chicken to a serving platter, and drizzle any remaining sauce from the skillet over the top. Garnish with freshly chopped parsley and serve with lemon wedges.

Enjoy: Serve with your choice of sides such as rice, potatoes, or a fresh salad.
