Ingredients

2 large boneless, skinless chicken breasts

1 tablespoon olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

Salt and pepper, to taste

1/4 cup chipotle ranch dressing (store-bought or homemade)

4 large flour tortillas

1 cup cooked white rice

1 cup black beans, drained and rinsed

1 cup corn (fresh, canned, or frozen)

1 cup shredded cheddar cheese

1 avocado, sliced

1 cup lettuce, shredded

Fresh cilantro, for garnish (optional)

Instructions

Marinate the Chicken: In a mixing bowl, combine olive oil, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Add the chicken breasts and coat them in the marinade. Let them sit for at least 30 minutes or refrigerate for up to 2 hours for deeper flavor.

Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-8 minutes per side, or until the chicken is fully cooked (internal temperature should reach 165°F). Once cooked, let the chicken rest for 5 minutes before slicing.

Warm the Tortillas: While the chicken is resting, warm the tortillas in a dry skillet or microwave them for about 15-20 seconds until pliable.

Assemble the Burritos: Lay a warmed tortilla flat on a clean surface. Starting at one edge, layer the following: 1/4 cup cooked rice, 1/4 cup black beans, 1/4 cup corn, a generous amount of sliced grilled chicken, a sprinkle of shredded cheddar cheese, slices of avocado, and a handful of shredded lettuce. Drizzle some chipotle ranch dressing over the top.

Wrap It Up: Fold in the sides of the tortilla and then roll it tightly from the bottom up to enclose the filling. Repeat with the remaining tortillas and ingredients.

Serve: Cut the burritos in half if desired and serve with extra chipotle ranch dressing on the side. Garnish with fresh cilantro if using.
