Easy Caprese Pasta Salad

8 oz rotini or fusilli pasta

2 cups cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1 cup fresh basil leaves, chopped

½ cup extra virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

Salt and pepper, to taste

Optional: ¼ teaspoon red pepper flakes for a hint of spice

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse under cool water to stop the cooking process. Set aside to cool completely.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and pepper until well combined. If you like a little heat, add the red pepper flakes.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, mozzarella balls, and chopped basil.

        Dress the Salad: Pour the dressing over the pasta mixture and toss gently until everything is evenly coated. Adjust seasoning with more salt and pepper if needed.
