Ingredients
  

2 large cucumbers

1 tablespoon salt

1 tablespoon sugar

3 tablespoons rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 clove garlic, minced

1 teaspoon ginger, minced

1 tablespoon sesame seeds, toasted

2 green onions, thinly sliced

Fresh cilantro (optional, for garnish)

Instructions
 

Start by slicing the cucumbers into thin rounds. If they have a thick skin, consider peeling them for a softer texture.

    Place the sliced cucumbers in a large bowl and sprinkle with salt. Toss to coat and let them sit for about 15-20 minutes. This will draw out excess moisture.

      In a separate bowl, whisk together the sugar, rice vinegar, soy sauce, sesame oil, minced garlic, and minced ginger until the sugar is dissolved.

        After 20 minutes, drain any excess liquid from the cucumbers and gently pat them dry with a clean kitchen towel.

          Pour the dressing over the cucumbers and toss to combine well.

            Add the toasted sesame seeds and sliced green onions into the cucumber mixture. Toss gently to incorporate all the ingredients.

              Optional: Garnish with fresh cilantro before serving for an extra pop of flavor and color.

                Serve immediately for a crunchy, refreshing dish, or refrigerate for up to an hour before serving to let the flavors meld.
