2 cups rolled oats

1 cup peanut butter (creamy or crunchy)

1/2 cup honey or maple syrup

1/4 cup brown sugar (packed)

1/2 cup mini chocolate chips (optional)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

Prepare the Microwave Dish: Line an 8x8 inch microwave-safe dish with parchment paper, allowing some overhang for easy removal later.

    Mix Ingredients: In a large microwave-safe bowl, combine the peanut butter, honey (or maple syrup), and brown sugar. Microwave on high for 30 seconds, then stir until all the ingredients are well combined and smooth.

      Combine with Oats: Stir in the rolled oats, vanilla extract, and salt until everything is evenly mixed. If using chocolate chips, fold them in at this stage.

        Transfer to Dish: Pour the mixture into the prepared dish. Using the back of a spatula or your hands (dampened to prevent sticking), press the mixture down firmly and evenly.

          Microwave: Microwave the pressed mixture on high for 1 to 1.5 minutes, checking after 1 minute until it's slightly firm to the touch but not overcooked.

            Cool and Set: Allow the granola bars to cool completely in the dish for about 30 minutes. Once cooled, use the parchment overhang to lift them out of the dish.
