For the Beef Filling:

1 lb ground beef

1 tablespoon vegetable oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 teaspoon Scotch bonnet pepper, finely chopped (adjust for heat preference)

1 teaspoon dried thyme

1 teaspoon allspice

1/2 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons soy sauce

1/4 cup beef broth

2 green onions, chopped

1/4 cup chopped fresh parsley

For the Pastry:

3 cups all-purpose flour

1/2 teaspoon salt

1 teaspoon turmeric powder (for color)

1/2 cup unsalted butter, cold and cubed

1/4 cup ice-cold water

1 large egg (for egg wash)

Instructions
 

Prepare the Beef Filling:

    - In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes.

      - Stir in the minced garlic and ginger, and cook for another minute until fragrant.

        - Add the ground beef to the skillet, cooking until browned. Drain any excess fat.

          - Mix in Scotch bonnet pepper, thyme, allspice, paprika, salt, and black pepper. Cook for 2-3 minutes.

            - Pour in the soy sauce and beef broth, stirring to combine. Allow to simmer for 5 minutes until the mixture thickens slightly.

              - Remove from heat and fold in the chopped green onions and parsley. Let the filling cool completely.

                Make the Pastry:

                  - In a large mixing bowl, combine flour, salt, and turmeric powder.

                    - Add the cold cubed butter, using your fingers or a pastry cutter to mix until it resembles coarse crumbs.

                      - Gradually add ice-cold water, mixing until the dough holds together. Be careful not to overmix.

                        - Divide the dough into two equal portions, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

                          Assemble the Patties:

                            - Preheat your oven to 375°F (190°C).

                              - On a floured surface, roll out one disc of dough to about 1/8-inch thick. Use a round cutter (about 4-5 inches in diameter) to cut out circles.

                                - Place about 2 tablespoons of the cooled beef filling in the center of each circle.

                                  - Moisten the edges of the dough with water, fold the circle in half, and press the edges together to seal. Use a fork to crimp the edges for a decorative touch.

                                    - Repeat with the remaining dough and filling.

                                      Bake the Patties:

                                        - Place the assembled patties on a baking sheet lined with parchment paper.

                                          - Beat the egg and brush the tops of the patties with the egg wash for a golden color.

                                            - Bake in the preheated oven for 25-30 minutes or until golden brown.

                                              Serve:

                                                - Allow the patties to cool slightly before serving. Enjoy them warm as a snack, appetizer, or part of a meal!
