Ingredients
  

2 medium cucumbers, diced

1 large crisp apple (such as Granny Smith or Fuji), diced

1/2 red onion, thinly sliced

1/2 cup walnuts, roughly chopped

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey

Salt and pepper, to taste

Instructions
 

In a large bowl, combine the diced cucumbers, diced apple, and sliced red onion.

    Add the chopped walnuts and parsley into the bowl. If you’re using feta cheese, add that as well.

      In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper until well combined.

        Pour the dressing over the salad mixture and toss gently to combine all the flavors.

          Taste the salad and adjust seasoning with more salt and pepper if needed.

            Let the salad sit for about 10 minutes before serving, allowing the flavors to meld together.
