Crockpot Loaded Steak and Potato Bake

Ingredients
  

2 lbs steak (sirloin or ribeye), cubed

4 large russet potatoes, diced

1 cup of onion, finely chopped

3 cloves garlic, minced

1 cup of beef broth

1 cup of sour cream

1 cup of shredded cheddar cheese

½ cup of cooked and crumbled bacon

1 cup of green onions, sliced

2 tsp smoked paprika

1 tsp salt

1 tsp black pepper

1 tsp dried thyme

Optional: additional toppings like jalapeños or diced tomatoes

Instructions
 

Begin by seasoning the cubed steak with salt, black pepper, and smoked paprika. In a skillet over medium-high heat, sear the steak for 3-4 minutes until browned on all sides. Remove from the skillet and set aside.

    In the same skillet, add the chopped onion and garlic; sauté for 2-3 minutes until translucent and fragrant.

      In your crockpot, layer half of the diced potatoes at the bottom. Add half of the seared steak on top, followed by half of the sautéed onion and garlic mixture.

        Sprinkle half of the thyme and then pour half of the beef broth over the layers. Repeat the layers with the remaining potatoes, steak, onions, garlic, thyme, and broth.

          Cover the crockpot and cook on low for 6-7 hours or on high for 4 hours, until the potatoes and steak are tender.

            Once cooked, stir in the sour cream until well combined, then top with cheese, crumbled bacon, and green onions. Cover again and let it cook on low for an additional 15-30 minutes until the cheese is melted.

              Serve the loaded steak and potato bake hot, garnished with extra green onions and any additional toppings you desire.
