Crispy Cheesy Chicken Quesadilla

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup shredded cheese (cheddar, Monterey Jack, or a mix)

1/2 cup cream cheese, softened

1/4 cup green onions, finely chopped

1/4 cup red bell pepper, finely diced

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

4 large flour tortillas

2 tablespoons olive oil or butter

Optional toppings: salsa, sour cream, guacamole, fresh cilantro

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, cream cheese, shredded cheese, green onions, red bell pepper, garlic powder, smoked paprika, salt, and pepper. Mix well until all ingredients are combined thoroughly.

    Assemble the Quesadillas: Lay one tortilla on a flat surface. Spread a quarter of the chicken filling evenly over half of the tortilla. Fold the tortilla over to create a half-moon shape. Repeat with the remaining tortillas and filling.

      Cook the Quesadillas: In a large skillet over medium heat, add 1 tablespoon of olive oil or butter. Once hot, carefully place one quesadilla in the skillet. Cook for about 3-4 minutes on one side or until golden and crispy.

        Flip and Finish Cooking: Carefully flip the quesadilla and cook for an additional 3-4 minutes on the other side until it is golden brown and the cheese has melted. Remove from the skillet and repeat with the remaining quesadillas, adding more oil or butter as needed.

          Serve: Cut each quesadilla into wedges and serve hot with your choice of salsa, sour cream, guacamole, and a sprinkle of fresh cilantro.
