Crispy Bang Bang Salmon Bites

1 lb salmon fillet, skinless and boneless

1/2 cup panko breadcrumbs

1/4 cup all-purpose flour

1 large egg, beaten

1/2 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spiciness)

1 tablespoon lime juice

Chopped green onions and sesame seeds for garnish

Prepare the Salmon: Cut the salmon fillet into bite-sized cubes, approximately 1-inch pieces.

    Coat the Bites: In a shallow dish, mix the flour, salt, black pepper, garlic powder, and smoked paprika. In another bowl, place the panko breadcrumbs. Dip each salmon cube first into the flour mixture, then into the beaten egg, and finally coat it with the panko breadcrumbs, pressing lightly to ensure the crumbs adhere well.

      Fry the Salmon: Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat. Once the oil is hot (test by dropping a breadcrumb in—it should sizzle), add the salmon bites in batches, taking care not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy. Remove the bites and place them on paper towels to drain excess oil.

        Prepare the Bang Bang Sauce: In a separate bowl, combine mayonnaise, sweet chili sauce, sriracha, and lime juice. Mix well until smooth and creamy. Adjust the spice level by adding more sriracha if desired.
