Ingredients
  

1 lb ribeye steak (or your preferred cut)

1 cup cooked jasmine rice

1 avocado, sliced

1 cup cherry tomatoes, halved

1 cup corn (fresh, canned, or frozen)

1 cup black beans, drained and rinsed

1/2 cup shredded cheese (cheddar or Monterey Jack)

1/4 cup chopped fresh cilantro

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon lime juice

1 teaspoon cumin

Salt and pepper, to taste

Optional toppings: sour cream, salsa, hot sauce, or crushed tortilla chips

Marinate the Steak: In a bowl, mix together olive oil, minced garlic, lime juice, cumin, salt, and pepper. Add the ribeye steak and coat well. Let sitting for at least 30 minutes, or refrigerate for up to 4 hours for more flavor.
