Creamy Chunky Tomato Soup

Ingredients
  

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 large carrots, diced

1 celery stalk, diced

2 cans (14 oz each) diced tomatoes (including juices)

3 cups vegetable broth

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

1 cup heavy cream (or coconut cream for a vegan option)

1 cup fresh basil leaves, torn (for garnish)

1 cup croutons (optional, for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until it becomes translucent.

    Add the garlic, carrots, and celery to the pot. Cook for another 5-7 minutes until the vegetables are tender.

      Stir in the canned diced tomatoes (with their juices), vegetable broth, dried basil, oregano, red pepper flakes, salt, and black pepper. Bring the mixture to a gentle boil.

        Reduce the heat and let it simmer uncovered for 15-20 minutes to allow the flavors to meld and the soup to thicken slightly.

          Once the soup has thickened, use an immersion blender to partially blend the soup, leaving some chunky bits for texture. If using a regular blender, allow the soup to cool slightly, then blend in batches.

            Stir in the heavy cream (or coconut cream) and heat while stirring until warmed through. Adjust seasoning with more salt and pepper if needed.

              Serve hot, garnished with torn fresh basil leaves and a sprinkle of croutons if desired.
