Ingredients

1 lb chicken sausage, sliced (your choice of spicy or mild)

1 cup orzo pasta

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

2 cups baby spinach

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional for heat)

4 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped for garnish

Instructions

In a large skillet, heat olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove sausage from the skillet and set aside.

In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until the onion is translucent.

Stir in the minced garlic, Italian seasoning, and red pepper flakes. Cook for another minute until fragrant.

Add the orzo pasta to the skillet and stir to combine. Pour in the chicken broth and bring to a simmer. Cook for about 10-12 minutes, stirring occasionally, until the orzo is al dente.

Once the orzo is cooked, reduce the heat to low. Stir in the heavy cream, grated Parmesan cheese, and cooked chicken sausage. Mix well until everything is evenly coated and creamy.

Add the baby spinach and stir until wilted. Season with salt and pepper to taste.

Serve immediately, garnished with chopped fresh parsley.
