Creamy Cajun Chicken Pasta

8 oz fettuccine or penne pasta

2 tbsp olive oil

1 lb boneless, skinless chicken thighs, sliced into strips

1 tbsp Cajun seasoning (adjust to taste)

Salt and pepper, to taste

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1/2 cup green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine or penne according to package instructions until al dente. Drain and set it aside.

    Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Season the chicken strips with Cajun seasoning, salt, and pepper. Add the chicken to the skillet and cook until golden brown and cooked through, about 6-7 minutes. Remove the chicken and set aside.

      Sauté the Vegetables: In the same skillet, add diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic and sliced red bell pepper, cooking for an additional 2-3 minutes or until the pepper is tender.

        Make the Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer, then add the grated Parmesan cheese. Stir continuously until the cheese is melted and the sauce is creamy.

          Combine Everything: Add the cooked chicken and drained pasta to the sauce, tossing everything together until the pasta is evenly coated in the creamy Cajun sauce.

            Garnish and Serve: Serve the pasta hot, garnished with chopped green onions and fresh parsley for added flavor and color.
