4 boneless, skinless chicken thighs

1/4 cup unsalted butter, softened

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh cilantro, chopped

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for heat preference)

1 teaspoon onion powder

1 teaspoon dried thyme

1 lemon, zested and juiced

Salt and pepper, to taste

1/4 cup buttermilk

Olive oil, for cooking

Prepare the Cowboy Butter: In a bowl, combine the softened butter, minced garlic, fresh parsley, fresh cilantro, smoked paprika, cayenne pepper, onion powder, dried thyme, lemon zest, and lemon juice. Mix well and season with salt and pepper to taste. Set aside.

    Marinate the Chicken: In a large resealable bag or shallow dish, mix the buttermilk with a pinch of salt and pepper. Add the chicken thighs and ensure they're well coated. Seal or cover and refrigerate for at least 30 minutes, ideally overnight for maximum flavor.

      Cook the Chicken: Heat a drizzle of olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. Place the chicken thighs in the skillet and cook for about 6-7 minutes on each side or until they are golden brown and cooked through (internal temperature should reach 165°F / 74°C).

        Add Cowboy Butter: When the chicken is nearly done, reduce the heat to low. Add a couple of tablespoons of the prepared cowboy butter to the skillet, allowing it to melt and coat the chicken for a couple of minutes, enhancing the flavor.
